Domaine des Combiers

BEAUJOLAIS VILLAGES

White

Les Bruyères

Grape variety : Chardonnay

 

Soil geology : Silty clay soil, south/east, rich and deep soil.

 

Age of vines : 30 years

 

Cultivation : reasoned

 

Vinification : Manual harvest, vinified entirely on the estate, vinification by direct pressing followed by settling to obtain a very clear juice. Temperature regulation at 16°C to keep the fruit aroma and have a long-lasting fatty taste.

 

Tasting notes : pale yellow colour, fruity nose (pear, citrus fruits) with notes of white flowers, round and supple on the palate with a lot of fat on the finish.

 

Gastronomy : Ideal as an aperitif. Serve at 8/10°C

 

Cellar : 1 to 3 years

MÂCON VILLAGES

White

La Chânoise

Grape variety : Chardonnay

 

Soil geology : Silty clay soil, very steep southern slopes, deep, rich, slightly stony soil.

 

Age of vines : 35 years old

 

Cultivation : reasoned

 

Vinification : Manual harvest, vinified entirely on the estate, vinification by direct pressing followed by settling to obtain a very clear juice. Temperature regulation at 16°C to keep the fruit aroma, to have long-lasting taste and a beautiful minerality.

 

Tasting notes : A pale yellow colour with a nose of citrus fruit and white flowers, rich on the palate with power, long-lasting taste and beautiful minerality, freshness and tension that express a very pure and precise wine.

 

Gastronomy : Perfect on fish and shellfish. Serve at 8/10°C

BEAUJOLAIS

Rosé des Granites

Grape variety : Black Gamay with white juice.

 

Soil geology : Granitic soil, south/east slopes, shallow soil.

 

Age of vines : 15 years

Vinification : Manual harvest, vinified entirely on the estate, vinification by direct pressing followed by settling to obtain a very clear juice. Temperature regulation at 16°C to keep the fruit aroma and have a long-lasting fatty taste.

 

Tasting notes : Salmon-pink colour, nose of vine peach and small red fruits, supple and fat on the palate, very refreshing with an acidulous and goulayant finish.

 

Gastronomy : Aperitif and summer meal. Serve at 6/8°C

Élégance

Grape variety : Black Gamay with white juice.

 

Soil geology : Granitic soil, south/east slopes, shallow soil.

 

Age of vines : 50 years

 

Cultivation : reasoned

 

Vinification : Hand picked, entirely vinified on the estate. Beaujolais vinification with entire bunch using semi-carbonic maceration, vatting for 6 to 8 days to extract fine tannins, thermal regulation in liquid phase (18 to 20°C) to keep the fruit aroma.

 

Tasting notes : Ruby colour, nose of small red and black fruits, round and greedy mouth finishing on slightly spicy notes with fine and persistent tannins.

 

Gastronomy : Very easy to drink and to accompany, wine of thirst by excellence. Serve at 12°C

Prestige

Grape variety : Gamay black with white juice

 

Soil geology : Granitic soil with some clay, south/east slopes.

 

Age of the vines : 80 years with a centenary plot.

 

Cultivation : reasoned

 

Vinification : Hand picked, entirely vinified on the estate. Beaujolais vinification with entire bunch using semi-carbonic maceration, vatting for 10 to 12 days to extract the spicy tannins characterizing this terroir, punching of the cap in the last days.

 

Tasting notes : Deep colour, nose of black fruits and liquorice, spicy on the palate with peppery notes, long and rich with very present tannins but of great finesse.

 

Gastronomy: Red meat and cheese. Serve at 12/14°C

FLEURIE

La Cadole

Grape variety : Black Gamay with white juice.

 

Soil geology : Pink granitic soil, shallow, gently sloping slopes exposed east, sandy soil.

 

Age of vines : 60 years

 

Cultivation : reasoned

 

Vinification : Hand picked, entirely vinified on the estate. Beaujolais vinification with entire bunch using semi-carbonic maceration at 32/34 °C, vatting from 8 to 12 days with punching of the cap the last days.

 

Tasting notes : Deep ruby/purple colour, very fine nose on violet and peony with notes of blackcurrant /blackberry fruits and spices. The palate is very silky with fine and elegant tannins; Fleurie is said to be the most feminine of the crus (the queen), very velvety and suave.

 

Gastronomy : Cold meats and white meats. Serve at 12/14°C

 

Cellar : 5 to 10 years

FLEURIE

Montgenas

Grape variety : Gamay black with white juice

 

Soil geology : Montgenas soil, very pink granitic soil, shallow, the rock outcrops in places, gentle slopes exposed east, very filtering soil.

 

Age of vines : 60 years

 

Cultivation : reasoned

 

Vinification : Hand picked, vinified entirely on the estate, Beaujolais vinification with entire bunch using semi-carbonic maceration at 32/34 °C, vatting from 8 to 12 days with punching of the cap the last days. Aged in oak barrels for 10 to 12 months.

 

Tasting notes : Deep ruby/purple colour, powerful nose of black fruits with notes of mocha and vanilla. The palate is very silky with fine and elegant tannins, round finish with a blend of spices and delicately woody notes.

 

Gastronomy : Red meat and cheese, ideal to finish a meal. Serve at 14 /16°C

Rosé

Sparkling semi-dry

Grape variety : Black Gamay with white juice.

 

Soil geology : Granitic soil

 

Vinification : Aromatic method

 

Tasting notes : Serve fresh, salmon pink colour, nose of small red cherry/pink fruits, the bubbles are fine, the palate is round and gourmand with a finish full of freshness well balanced between the light natural sweetness of the grape and its small acidulous side.

 

Gastronomy : Ideal as an aperitif or with a fruit dessert, praline tart, festive wine.

ROUGE

Sparkling semi-dry

Grape variety : Black Gamay with white juice.

 

Soil geology : Granitic soil

 

Vinification : Aromatic method.

 

Tasting notes : Serve fresh, ruby red colour, nose of red and black fruits, raspberry/blackcurrant, fine bubbles and pink/violin foam, complex on the palate, slightly vinous, finishing with fruity notes and a beautiful harmony between tannins and natural sweetness of the grape.

 

Gastronomy : Ideal as an aperitif or with desserts with raspberry red fruits, blackcurrant tarts or cakes with light cocoa taste. Very original by its color, festive wine.

Vinification : Hand picked, entirely vinified on the estate. Beaujolais vinification with entire bunch using semi-carbonic maceration, 4 to 5 days vatting, thermal regulation in liquid phase (16 to 18°C) to keep the fruit.

 

Tasting notes : Deep colour, slightly purple, very expressive nose of boiled sweet flavours and small red fruits (strawberries, raspberries). Full and rich on the palate with notes of candied fruit, very coated tannins, lots of drinkability.

 

Gastronomy : Ideal with cured meat / pork dishes. Serve at 12°C

Nouveau

Grape variety : Black Gamay with white juice.

 

Soil geology : Granitic soil, south/east slopes, shallow soil.

 

Age of vines : 40 years old

 

Vinification : Hand picked, entirely vinified on the estate. Beaujolais vinification with entire bunch using semi-carbonic maceration, 4 to 5 days vatting, thermal regulation in liquid phase (16 to 18°C) to keep the fruit.

 

Tasting notes : dark colour with intense reflections, complex nose of small red and black fruits, rich and ample on the palate, generous with round tannins that accompany a rich aftertaste.

 

Gastronomy : Ideal with cured meat / pork dishes/ cheeses. Serve at 12°C
